Oven Roasted Cauliflower Recipe


    1 medium head of cauliflower, stem and leaves removed
    3/4 c plain Greek yogurt
    1/4 c grated parmesan cheese
    1 t onion powder
    1 t garlic powder
    1/4 t ground cayenne pepper (more or less to taste)

Preheat oven to 400 F. Oil a baking sheet and set aside.
Clean head of cauliflower, pat dry, and set aside.
Mix remaining ingredients in a bowl large enough taccommodatete the entire head of cauliflower.
Coat the entire head of cauliflower in the yogurt mixture. I like to squish some into the spaces between the florettes.
Place on baking sheet and bake 30-40 minutes. After 30 minutes, I turned my oven up to 450 F, and baked it another 10 minutes to get a nice golden brown.
Let sit a few minute upon removing from the oven. Cut into quarters and serve.

Serving Size: serving size is 1/4 of the cauliflower head
