Ember Grille & Wine Bar Debuts Tomorrow at L'Auberge du Lac Casino Resort; Executive Chef Jose Aleman Joins Award Winning Culinary Team   

Modern American steakhouse continues property tradition of exemplary guest service; adds wood-fired grill, elegant piano lounge with additional seating and signature tableside menu options       

LAKE CHARLES, La. — Ember Grille & Wine Bar makes its debut tomorrow night at L'Auberge du Lac Casino Resort in Lake Charles, La.  The modern American steakhouse features a wide variety of Certified Angus, Kobe and Natural Grass Fed beef cooked to perfection over a wood-fired grill and paired with an extensive wine list and impeccable service. Executive Chef Jose Aleman joins the L'Auberge culinary team for this exciting new dining experience.

Upon entering Ember Grille & Wine Bar, guests will find a warm and elegant interior with expansive stone fireplaces, log walls and a relaxed atmosphere. The 140-seat dining experience features plush carpeting and banquettes of fine leather under rich, textural copper and rustic cowhide wall accents. The expansive piano lounge and bar with dramatic slate floors offers an additional 50 seats alongside a grand piano, where live music will be featured on a regular basis. A separate bar menu will feature tapas style options such as New York Strip Sliders, Fried Calamari Fritto Misto, Fried Crawfish Mac & Cheese, Lobster Corn Dogs and Beef Carpaccio. Skilled 'mixologists' will create custom hand-crafted cocktails. A private dining room is also available for reservation and seats up to 14 guests.

Steaks are the star of Ember's new menu, seared at high temperature over hickory to lock in the flavor and served to individual preference with a choice of rubs, flavored butters and complementary sauces. Signature dishes include the 42-ounce Tomahawk carved tableside for two; Smoked Pepper Crust Ahi Tuna with wasabi mashed potatoes, King Oyster mushroom, baby bok-choy and soy ginger sauce; and the Kurobuta Pork Chop served with caramelized apple, Applewood smoked bacon and brandy sauce. A diverse appetizer menu features mouthwatering starters such as New Zealand Lamb Chops with Moroccan Dipping Sauces, Seared Hudson Valley Foie Gras, Black Truffle Goat Cheese Baklava, Tableside Prime Filet Steak Tartar and a dramatic Chilled Seafood Tower. A variety of fresh vegetables and side items served playfully in cast iron skillets rounds out the menu with a focus on seasonal products.

Ember will feature an array of custom desserts created by the resort's award winning pastry chefs, with a focus on fun and interactive options such as S'mores Ember-style; featuring a create-your-own platter of house made graham sable crackers, bittersweet chocolate truffle and skewers of vanilla marshmallows served alongside a flaming tabletop hibachi and designed to be shared. Classic Crème Brûlée is torched tableside and artfully served with roasted pistachio biscotti and port poached figs. Ember Truffles feature house-made vanilla, chocolate and strawberry gelato hand-rolled in chocolate and served with butter spritz cookies.

Jose Aleman joins L'Auberge as executive chef at Ember. He comes to Lake Charles from overseeing BOA Steakhouses in Las Vegas, West Hollywood and Santa Monica plus Sushi Roku Las Vegas. Prior to that, he displayed his culinary skills at the famed Eiffel Tower restaurant at Paris Las Vegas and at Tru and The Everest Room in Chicago. Born in Mexico, Chef Aleman is dedicated to creative cuisine using the freshest seasonal product available.

"I am honored to have worked alongside some of the best in the culinary business, but nothing tops the new and exciting offerings at Ember," said Chef Aleman.  "We created this menu with a focus on intense flavor while allowing guests to customize wood-fired steaks their way and explore a whole new array of unique, diverse dishes and playful desserts."

Ember general manager and sommelier Stephanie Miller Vincent will oversee an expansive wine list and offers her extensive expertise to diners. A team of skilled and experienced staff delivers personalized and attentive tableside service L'Auberge guests have come to expect and love.

Ember Grille & Wine Bar is open for dinner nightly from 6 p.m.; 5:30 p.m. Saturdays. The bar and piano lounge opens nightly at 5:30 p.m. and remains open until midnight Sunday through Thursday; 1:00 a.m. weekends.
