Parmesan Puffs

Serves 36

8 ounces cream cheese, softened

1 ½ teaspoons grated onion

2 ½ tablespoons chopped green onions

½ cup (2 ounces) freshly grated Parmesan cheese

½ cup mayonnaise

Tabasco sauce to taste (optional)

¼ teaspoon cayenne pepper

1 loaf thinly sliced white bread 

Combine the cream cheese, grated onion, green onions, mayonnaise, Parmesan cheese, Tabasco sauce and cayenne pepper in a bowl and mix well.  Chill for 30 minutes. 

Cut the bread into rounds with a 1 ½ - inch cutter.  Mound the cream cheese mixture onto the triangles and place on an ungreased baking sheet.  Freeze until firm.  Bake the frozen rounds in a preheated 350-degree oven for 15 minutes or until the topping is puffed and the bottoms are slightly crisp. 

Tip:  For quicker preparation, you can cut the bread crusts off and cut each slice into 4 pieces cross wise. This recipe can be prepared ahead and frozen for a quick appetizer any time!
