Former U.S. Pastry Competition Gold Medalist brings award-winning skills to Lake Charles

LAKE CHARLES, La. - L'Auberge du Lac Casino Resort, a luxury Texas Hill Country-themed resort in Lake Charles, La., recently hired Bill Foltz as its new pastry chef. Foltz specializes in fine dining, high volume banquets and exquisite chocolate and sugar showpieces and has held successful leadership positions at 4-star/4-diamond rated establishments. In 2006, he earned a gold medal at the U.S. Pastry Competition and was named U.S. Pastry Chef of the Year.

Foltz brings more than seventeen years of dynamic experience to L'Auberge. He comes to Lake Charles from Dunwoody, Ga. where he was the executive pastry chef for Alon's Bakery & Market; a multi-outlet bakery and market.

Previously, Foltz held food and beverage management positions at Salara Desserts & Bistro in Charlotte, NC., where he was executive pastry chef and general manager for the upscale dessert lounge and bistro; the historic 350-room Sagamore Resort in Bolton Landing, NY., where he oversaw a team of pastry cooks supplying seven food outlets and a convention facility; and Pinehurst Resort & Country Club in Pinehurst, NC.

In his new position, Foltz is responsible for overseeing a team of bakers and cooks providing unique desserts for all L'Auberge food outlets, including large conferences and high end guest functions. Foltz will maintain an environment that creates excitement for guests and employees; train and retain a highly skilled workforce; maintain budget and staffing for efficient bakery operations; and effectively implement changes to improve operations and ensure quality baked goods and new menu items.  

Foltz graduated from the National Center for Hospitality Studies at Sullivan College in Louisville, Ky. with an associate of science in baking and pastry arts; and from Hocking College in Nelsonville, Oh. with an associate of applied business degree in culinary arts technology. He is Servesafe Certified and his extensive training includes certifications in Advanced Sugar Masterpiece, Advanced Airbrushing, Sugar I/II, and Cakes & Tarts with Sebastian Canone at the French Pastry School.

Among his many accolades, Foltz was invited to judge the U.S. Pastry Competition in 2007 and 2008; has consistently earned medals and honors at the U.S. Pastry Competition; won a gold medal from the French Consulate in Paris for Best Pastillage showpiece; a gold medal at the Annual Salon of Culinary Arts; and his pastillage centerpieces were featured in the National Culinary Review.

Foltz has studied with Ewald Notter, Olivier Bajard, Stephane Treand and Sebastian Canonne.
